Easy Paella

Swanson No Added MSG Clear Chicken Broth 700mL
Swanson No Added MSG Concentrated Chicken Stock 1 tsp
Chorizo Sausage 1 pc (around 80-100g, diced)
Chicken Breast around 100g
Squid 1 pc
Prawn 6-8 pcs (Head off, peel but leave tail on prawn)
Mussel 6-8 pcs
Bomba Rice 2.5 cups
Red Bell Pepper Onion 1 pc (diced)
Tomato Puree 130g
Bayleaf 2 pcs
Garlic 3 cloves
Paprika Saffron Parsley as appropriate
Lemon 3-4 pcs
Chunked the chicken breast and cut the squid in rings.
Marinate chicken breast, squid and prawn with 1 tsp of Swanson No Added MSG Concentrated Chicken Stock separately and set aside.
Stir fry chicken breast with 1 tbsp of oil until medium well, set aside. Stir fry chorizo sausage until oil released, stir in onion until transluscent and add garlic, stir well. Then add red bell pepper and tomato puree and stir fry until well mixed. Add squid and appropriate amount of paprika until fragrant.
Add bomba rice, saffron and bayleaf and stir well. Add Swanson No Added MSG Clear Chicken Broth. Topped with medium well chicken breast and prawn, boil with lid over low heat for 15 minutes or until rice softened (broth is 80% absorbed).
Place mussels evenly on rice, mix briefly and cook for another 5 minutes.
Sprinkle with parsley and place lemon slices on top. Ready to serve.

  2. Saffron is paella’s signature ingredient which is available in hypermarkets, yet it is equally  delicious without it.
  3. Paprika, portion of seafood and other ingredients can be adjusted according to own preference.
  4. Can prepare lemon wedges for squeezing over to serve.
  5. Bomba rice is best known for its ability to absorb moisture which gives paella a rich flavour. Normal rice is a fine substitute but may need to adjust chicken broth portion accordingly.
