Tofu and Lemongrass Rice Noodle Soup

Ingredients
Swanson Pork Bone Broth 500ml
Minced Pork 80g
Hard Bean Curd 1 (340g)
Shallot 1 (Chopped)
Lemongrass 1 roll (Chopped)
Lime 1pc
Sugar   1 tsp
(200g) Dried Rice Noodles 2 pcs
Oil 2 tsp

Dice the hard bean curd and set aside.

Heat up oil in a saucepan, add in shallot and lemongrass, stir-fry until fragrant. Add the minced pork, stir-fry until half cooked. Add sugar.

Pour in Swanson Pork Bone Broth and bring it to boil. Add the rice noodles and hard bean curd, simmer until all ingredients are cooked through.

Divide among bowls, squeeze lime juice, then serve.

Add the chopped red chili if you like spicy.
