Steamed Egg Custard with Clams

Ingredients
Swanson No Added MSG Clear Chicken Broth 250mL
Short Necked Clam 1/2 catty
Egg 3 pcs
Water as appropriate
Salt as appropriate
Hot Oil as appropriate
Soy Sauce as appropriate
Shredded Scallion as appropriate

Soak the clams in salted water and allow to purge sand for 30 minutes, set aside.

Bring a pot of water to boil, add clams and cook until opened, transfer to a plate.

Beat the eggs and stir in Swanson No Added MSG Clear Chicken Broth, sieve the egg mixture twice.

Pour the egg mixture into the plate with clams, cover with plastic wrap.

Bring a new pot of water to boil, steam the egg mixture with clams for 10 minutes in medium high heat.

Add hot oil, soy sauce and sprinkle with shredded scallion, ready to serve.

Short necked clam can be replaced by white clam or diamond clam.
