Shrimp thawed, washed and pat dried. Marinate with Swanson No Added MSG Concentrated Chicken Stock for 10 minutes and set aside.
Tomato washed. Cut a shallow “X” on the bottom and blanch in boiling water for 1 minute, flip them on and off. Removed and submerged in cold water right away and peeled. Diced and set aside.
Add a pinch of salt into the same pot of boiling water, add diced tofu carefully and boil for 10-30 seconds to exquit excess water. Drained and set aside.
Stir fry garlic until fragrant. Add shrimps and toss until turned golden. Dish out and set aside.
Grease a pan with some oil over low heat. Stir in tomato briefly. Add Swanson No Added MSG Clear Chicken Broth and bring to boil with lid over medium heat.
Add mirin, tomato sauce and sugar, then add tofu and shrimps. Mix well and simmer for a further 5 minutes with lid.
Thicken with cornstarch water, sprinkle with scallion and serve.
