Cold Noodles with Shredded Chicken

Ingredient
Soba Noodle 160g
Chicken Breast 200g
Swanson Concentrated Chicken Stock 2 loops
Cucumber 120g
Carrot 1/2 (140g)
White Sesame Seeds 1 tbsp
Chopped Cilantro Handful
Marinade
Swanson Concentrated Chicken Stock 2 loops
Minced Garlic 1 tsp
Sesame Oil 1 tbsp
Sugar 1 tsp
Peppercorn Chili Oil 1-2 tsp
Balsamic Vinegar 2 tbsp
Water 3 tbsp

Marinate chicken breast with Swanson Concentrated Chicken Stock for 15 minutes.

Shred the cucumber. Peel and shred the carrot.

Add soba noodles in boiling water to cook for 5 minutes. Drain and rinse in iced water. Drain well and put into fridge.

Bring another pot of water to boil, add chicken breast, simmer for 10 minutes until fully cooked. Shred the chicken breast by hand.

Toast the sesame seeds in a pan until fragrance.

Combine all the sauce ingredients in a bowl. To taste.

Place soba noodles in a serving bowl. Put the cucumber, carrot and chicken on top. Pour the sauce over.

Garnish with sesame seeds and chopped cilantro. Mix everything together and serve !

 Can use the konjac noodles or udon to replace the soba noodle.
