Scrambled Egg with Bitter Gourd

Swanson No Added msg Concentrated Chicken Stock 2 loops (2tsp)
Bitter Gourd 1 (300g)
Eggs (Beaten) 3 pcs
Ginger (Minced) 2 Sliced
Oil 2 tsp
Slice bitter gourd half length-wise and scoop out the white, soft part with seeds inside. Use pinch of salt to rub the bitter melon gourd and leave for 10 minutes.
Bring water to boil, blanch the bitter gourd. Drain, then squeeze out the juice by kitchen towel, set aside.
Heat a frying pan with oil over medium high heat, add chopped ginger, stir fry until fragrant, add bitter gourd slices and Swanson No Added msg Concentrated Chicken Stock, stir fry for about 1 minute.
Pour beaten eggs, stir fry till they are scrambled. To serve.
