Braised Pumpkin with Taro and Pork Ribs

Swanson No Added MSG Clear Chicken Broth 1L
Pork Ribs 300g
Peeled Pumpkin (Sliced) 200g
Peeled Taro (Chopped) 200g
Shallot 1 (Sliced)
Garlic (Sliced) 2 pc
Coconut Milk 150ml
Parsley For decoration
Swanson No Added MSG Concentrated Chicken Stock 2 tsp
Mix the marinade with pork ribs and set aside for 15 minutes.
Bring Swanson No Added MSG Clear Chicken Broth to boil in a large pot. Add sliced pumpkins and cook for 8 minutes on medium high heat. Place 2/3 of the pumpkins around a plate. Keep rest of the pumpkins and soup.
Stir fry the shallot and garlic in an oiled wok under high heat. Add pork ribs and fry for 3 minutes. Add taro.
Stir in the rest of the pumpkins and soup, cook for 10 minutes. Add coconut milk. Mix well and serve with parsley.

Do not overcook the coconut milk so the sauce can be smooth and silky.
