Japanese Pork and Burdock One Pot Rice

Ingredients
Pork Slices 600g
Burdock 80g
Carrots 130g (thin strips)
Edamame Beans 40g
Japanese Pearl Rice 370g
Swanson Clear Chicken Broth 500ml
Salt and Black Pepper to taste a little

Peel the burdock and cut them into thin strips, soak in the vinegar water.

Wash the pearl rice and soak for 15 minutes, drain and set aside.

Put the Swanson Clear Chicken Broth, burdock, carrots and pearl rice into the rice cooker, and stir well. Cook the rice.

When the rice is almost done, add the pork slices and edamame beans. Season with salt and pepper.

Cooked until the pork is cooked through. To serve.

– Put the burdock in vinegar water to prevent it from turning brown. (1 bowl water add 1 tsp vinegar) 

– Soaking rice prior to cooking could make the rice fuller and more flavorful.  

– Adding brown rice, quinoa or oat rice as desired to add the fiber and a chewy texture. 

-Fresh/ frozen edamame beans could be found in Japanese supermarket.
